If you're hosting Easter brunch this year, or if you're headed to a brunch and need the perfect, no stress dessert, I have you covered. Easter is such a happy day of the year, and to celebrate a happy day, one needs a dozen easy Easter cupcakes. This weekend, Hunter and I spent a few hours enjoying the spring weather around Buckhead Atlanta. Conveniently located in the heart of Buckhead and just minutes from our house - literally, about three of them, this shopping district boasts just about everything your heart desires...including Georgetown Cupcake.
Georgetown Cupcake happens to be one of the most sought-after cupcake shops around, and Atlanta welcomed them here just a few short weeks ago. Georgetown Cupcake also happens to have coconut cupcakes every Saturday which is exactly the kind of cupcake you'll need for these easy Easter cupcakes. So here's what you do:
Step 1: Pick up a dozen coconut cupcakes from your local bakery. Vanilla iced cupcakes will do fine, too, just sprinkle some coconut flakes on after the fact.
Step 2: Pick up some Cadbury mini eggs. You'll only need 3 eggs per cupcake which means plenty for you to snack on later.
Step 3: Add 3 Cadbury mini eggs to the top of each coconut cupcake.
Step 4: Awe guests with your baking skillz. The joke's on them, but your secret is safe with me.
P.S. Don't forget that there is a correct way to eat a cupcake...
