Tomato Tartare

Apparently, it's recipe a go-go on PPD recently. This is why I have to categorize myself as a Lifestyle blogger. Sometimes you'll see me talk about fashion, other times DIYs, other times small business, and here recently a whole lot of food. I've said it once, and I'll say it again, I am in no way a food blogger (although I like to use that hashtag from time to time). But, I do love me a good, quick, lip-smacking, mouth-watering dish. Like this one. 

Hunter and I went to Cooks & Soldiers for Valentine's Day dinner last weekend, and we give it two thumbs way up. One of our favorite dishes of the night was the Tomato Tartare which is exactly what inspired the recipe you'll find here. Of course mine is no where near as fabulous as the one at Cooks & Soldiers, but it's still pretty darn good. And easy. So easy that it uses canned tomatoes. #truth


Tomato Tartare
serves 2

You will need:
- 1 can Hunts Fireroasted Tomatoes (on sale now!)
- 1/4 sweet onion
- fresh basil 
- Pillsbury French Bread (also on sale now!) 
- Olive Oil

To prepare:
Preheat oven and cook bread according to package directions. 

Place a round cookie cutter on a plate. Chop a Vidalia onion and arrange into the center of the cookie cutter, filling in odd corners. Meanwhile, drain tomatoes in a strainer over the sink until most of the liquid is gone. Scoop enough tomatoes to fill the rest of the cookie cutter. Garnish with basil. Remove cookie cutter.

Slice bread on a diagonal into 1/4 inch thick pieces. Heat grill pan over medium heat and drizzle with olive oil. Grill bread slices 1-2 minutes on each side. Serve with tomato tartare.
